Strawberry Salsa
Greetings food adventurers! Today we boldly go to a new destination in a new world – space! A vacation to the planet of Risa seems in order, complete with some tropical-inspired strawberry salsa. I love fruit salsas and this one feels perfect for mentally transporting to another world. Strawberry salsa is both sweet and spicy (depending on your peppers) and perfect for a relaxing sunny afternoon with chips and an ice-cold lemonade with a fancy umbrella.
The whole planet of Risa is all about vacation. Maybe your favorite spot will be next to a pool, or under some shady trees. No responsibilities, no timelines, no to-do lists, no news reports. Sleep in, start the day with a massage. Just grab a book, puzzle, swimsuit, hiking shoes… whatever gives you that wonderful sense of total relaxing. Feel the light breeze and listen to it rustling all the trees. Smell the always-blooming tropical flowers and the salty ocean air. Make friends with all the other species in the gaming rooms. Enjoy 24/7 snacks. Watch the ships take off and land at the space-port.
While we can’t get our salsa from food replicators, this is almost as fast – and a perfect way to enjoy ripe farm-fresh summer strawberries.
Strawberry Salsa
Ingredients
- 2 cups fresh strawberries hulled and chopped small (about 1 pint)
- 1 medium jalapeño chopped small
- 1 serrano chile chopped small (optional; add this if you like it spicy)
- ¼ to ½ small red onion chopped small
- 2 Tbsp fresh lemon juice about 1/2 a large lemon
- ¼ tsp chili powder
- Tortilla chips for serving
Instructions
- Mix all ingredients together in a non-metal bowl.
- Move about 2/3 of the mixture to a food processor, blender, or separate bowl with immersion blender. Pulse just a few times – we are not going for a puree, just a very fine chop.
- Mix the saucy blend back into the chopped ingredients and stir well. Chill until serving time.
