
Honey Oat Granola
Greetings food adventurers! This morning we awake in the Emerald Grove (aka the Druid Grove) in the Wilderness area outside Baldur’s Gate. Breakfast is Honey Oat Granola with yogurt and seasonal fruit. Since it’s the tail end of winter, the only fresh fruits are the last of the apples in storage from the fall, but plenty of tasty dried fruits are available. Use whatever nuts and dried fruits you have handy for this. It will be a little different every time.
Although it is cold outside, our tents are warm, and the tall stone walls and caves protect us from wind and weather. We sit around morning campfires with hot clay mugs of herbal tea and share breakfast as everyone slowly wakes up and comes out to join the group. The nearby birds are starting to wake up too, and chirp with song at the earlier sunrises and warmer mornings. We pull our blankets a little tighter around our shoulders as a breeze comes through. There are hard times behind and ahead, but for now we can rest with friends, find a smile and maybe even laugh a bit. Practice an instrument. Bring more art and joyfulness into the world. It is still winter, but spring is coming.

Honey Oat Granola
Equipment
- Large cookie sheet / baking sheet
Ingredients
- 3 cups old-fashioned rolled oats (not quick-cooking)
- 1 to 1 ½ cups mixed nuts: chopped almonds, chopped hazelnuts, whole pepitas, etc. (see note)
- ½ cup avocado oil or other neutral-tasting oil
- ¼ cup honey
- 1 ¼ cups dried fruit such as cranberries, diced dried apricots, raisins, sultanas, dates, and/or currants (mix and match!)
- ¼ tsp ground cinnamon (optional)
- ¼ cup chocolate chips or mini-chips (optional)
Instructions
- Preheat oven to 350° F.
- Toss the oats and nuts together in a large bowl.
- Whisk together the oil and honey in a small bowl.
- Pour the liquids over the oat mixture and stir until all oats and nuts are coated.
- Pour onto a cookie sheet and bake for 25 minutes, stirring halfway through, until the mixture turns a nice golden brown. You can cook for an extra few minutes but don't let it turn too dark or it will taste burnt.
- Remove your granola from the oven and allow it to cool, stirring occasionally. It will get crispy as it cools down.
- Add dried fruit, cinnamon, and chocolate chips, if using. Store in an air-tight container. It will keep for at least a week.
