Honey Oat Granola

Sweet crunchy granola with oats, nuts, and dried fruits.

Equipment

  • Large cookie sheet / baking sheet

Ingredients
  

  • 3 cups old-fashioned rolled oats (not quick-cooking)
  • 1 to 1 ½ cups mixed nuts: chopped almonds, chopped hazelnuts, whole pepitas, etc. (see note)
  • ½ cup avocado oil or other neutral-tasting oil
  • ¼ cup honey
  • 1 ¼ cups dried fruit such as cranberries, diced dried apricots, raisins, sultanas, dates, and/or currants (mix and match!)
  • ¼ tsp ground cinnamon (optional)
  • ¼ cup chocolate chips or mini-chips (optional)

Instructions
 

  • Preheat oven to 350° F.
  • Toss the oats and nuts together in a large bowl.
  • Whisk together the oil and honey in a small bowl.
  • Pour the liquids over the oat mixture and stir until all oats and nuts are coated.
  • Pour onto a cookie sheet and bake for 25 minutes, stirring halfway through, until the mixture turns a nice golden brown. You can cook for an extra few minutes but don't let it turn too dark or it will taste burnt.
  • Remove your granola from the oven and allow it to cool, stirring occasionally. It will get crispy as it cools down.
  • Add dried fruit, cinnamon, and chocolate chips, if using. Store in an air-tight container. It will keep for at least a week.

Notes

If you have whole almonds, hazelnuts, or other larger nuts, break them into smaller pieces by pulsing them briefly in a food processor or putting them in a ziplock bag and gently smashing with a rolling pin.
Avoid: sliced almonds (aka tiny daggers). Walnuts make the overall flavor more bitter.
Adding chocolate chips while the granola is still warm will melt them, so if you want whole chocolate chips (or other chips) in the granola then let it cool completely before mixing them in.
