Makes 6 servings (4 dates each)

Special Equipment

  • Pastry brush (for brushing on the syrup)

Ingredients

  • 24 Medjool dates
  • ¼ cup Maple syrup
  • 12 Slices of bacon cut in half (regular, not thick-cut)
  • 4 oz mild Blue cheese crumbles

Instructions

  • Slice halfway through the date to reveal the pit, then pinch the date and remove the pit.
  • Preheat oven to 400 F.
  • Stuff cheese tightly into each date.
  • Cut the bacon slices in half and wrap them around the stuffed date, cheese facing up and the bacon seam meeting underneath.
  • Place the bacon wrapped dates into a 9x13” baking dish, bacon seam side down.
  • Bake for 30 minutes. (This precooks the bacon, otherwise it never crisps up)
  • Pour the maple syrup into a small bowl.
  • REDUCE THE OVEN TEMP to 375 F.
  • Brush the treetos with maple syrup and return to cook for an additional 5 minutes.
  • Repeat, brush with syrup and cook another 5 minutes.
  • If any syrup is remaining in the bowl, pour it over the treetos. Bake for a final 5 to 8 minutes until they look crispy and delicious.

Notes

Only use real maple syrup.
If somehow there are any leftovers, store these in an airtight container in the fridge for up to two days.
