Darkfriend Deviled Eggs

What appetizer should one brink to a Darkfriend Social? Deviled Eggs, obviously. Maybe with a little surprise to remind everyone at the table that the Dark One’s Eyes are always on them, once they swear their souls to the Shadow. Might want to make extras in case there are hungry trollocs outside.

This is a pretty classic deviled egg recipe but sometimes simple is exactly what I crave. Just something easy, comforting, and always popular at parties.

(This is a reference to the gathering of darkfriends at the beginning of Season 2, Episode 1 of the Amazon Prime show Wheel of Time – and if you aren’t watching this show yet, you should be!)

Darkfriend Deviled Eggs

Mostly normal deviled eggs, with a surprise – if you gather with Darkfriends, the Dark One's Eyes may be on you at any time!

Ingredients
  

  • 6 eggs
  • 5 Tbsp Mayonnaise
  • 2 tsp Yellow mustard
  • tsp table salt
  • Paprika for garnish but important to include
  • Dried or finely chopped fresh parsley optional, for garnish
  • 1 pimento-stuffed green olive optional but fun!

Instructions
 

  • Hard-boil the eggs (see notes for tips).
  • MEANWHILE, prepare a platter to place the finished eggs on. Eggs will slide right off of a plate so it is best to lay out some decorative lettuce or something similar that will help keep them in place. (Alternately, use a deviled egg serving plate that has divots for each egg)
  • When eggs are done cooking, immediately put them into cold water and let them cool completely.
  • Carefully peel the eggs (discarding the shells or putting them in the compost bin).
  • Cut eggs in half lengthwise.
  • Gently scoop out the yolks into a medium bowl. Place the egg white halves onto the prepared platter or deviled egg holder, hollow side up.
  • Place the olive into the hollow of one of the eggs. (Note – I don’t recommend doing more than one; they are meant to be a surprise but they are not… the most delicious.)
  • Mix mayonnaise, mustard, and salt into the egg yolks, combining thoroughly.
  • Use a pastry bag to pipe the filling into the egg hollows, completely covering the olive in the surprise egg so it looks like the rest. (Or just dollop the filling in using a spoon for a more rustic look).
  • Sprinkle paprika lightly over the tops. Be gentle with this; a little goes a long way. Add parsley, if desired.
  • Decide whether to let the guests know that the dark one’s eyes may be on them.

Notes

Hard boiling eggs:  If you have an Insta-Pot, I highly recommend this recipe by Cooking with Curls (although I do my eggs for 3 minutes rather than 5). 
If not – place eggs in a large pot of water, making sure the water covers the eggs completely.  Bring water to a boil, then turn it down to a simmer.  Simmer for 10 minutes, then turn off the heat and immediately move the pot to the sink.  Run cold water over the eggs so they stop cooking.  Do some tests on the timing to make sure your yolks are the consistency you like.  If you notice a gray ring on the outsides of the yolks, that means the eggs are overcooked (they’ll still taste fine, just doesn’t look as pretty).
