Green Tomato Enchilada Sauce
Today we visit the goblins of Bilgewater Harbor in Azeroth for their (not-so) secret recipe for Green Tomato Enchilada Sauce. This is a verde (green) sauce, similar to those made with tomatillos. Green tomatoes are exactly what they sound like: tomatoes that did not ripen yet. Why would you pick them before they ripen? Tomato plants do not do well once the cold weather of autumn really sets in, so before the first frost many gardeners do a big harvest of tomatoes in any stage of ripening as long as they are big enough. You can force them to ripen by putting them in a paper bag with a banana (science is awesome!), or use them green in recipes like this one for a different flavor experience.
The goblins of Azeroth don’t let anything go to waste that could be turned into something delicious. They also specialize in alchemy, such as turning garden fruits into spicy flavorful sauce, so naturally we would visit them to find out what to do with this huge pile of green tomatoes. This comes together quickly and easily after everything is prepped. As the goblins say, time is money!
Goblins love foods with a kick – adjust the spiciness level by selecting Mild or Hot canned green chilis. I use one 4-oz can of each to balance out at a nice Medium.

Green Tomato Enchilada Sauce
Equipment
- 1 Large pot
- 1 Immersion blender, regular blender, or food processor
- 1 Kitchen scale
Ingredients
- 2 Tbsp avocado oil or olive oil
- 1 medium white onion chopped (about 1 cup)
- 2-3 cloves garlic chopped (about 2 Tbsp)
- 2 pounds chopped green tomatoes SEE NOTE
- 2 cups chicken broth or vegetable broth
- 2 tsp table salt
- ¼ cup cilantro leaves chopped
- 3 tsp ground cumin
- 2 tsp ground black pepper
- 8 oz canned chopped green chiles 2 small cans
- Saute the onion and garlic in oil in a saucepan until the onions soften.
Instructions
- Heat the oil in a large pot on medium to medium-high.
- Saute the onion and garlic in oil until the onions soften and brown a little, about 5-10 minutes.
- Add the remaining ingredients to the pot.
- Bring to a boil, then reduce heat and simmer 20-25 minutes or until tomatoes are soft.
- Puree with an immersion blender or allow to cool down and puree in a food processor or blender.
